I decided to go for the single guy eating alone easy peasy (but not Fuck it TV dinner mode) T-day meal mode.
Frozen mixed veggies
Tater tots
and ham steak fried up in butter and brown sugar. (was seriously questioning this decision as the butter and way to much brown sugar heated up)

The key to good Mac & Cheese is to bake it. Do the pasta, put it in a baking pan and mix in a slurry of eggs, heavy cream, and shredded sharp cheddar cheese. Stir well (it should quite soupy), and bake 45 minutes at 350º, covered, and then 15 minutes, uncovered.

for a long time i was on a low cholesterol (totally unfair) diet. so cheese was basically out. i found a very good vegan version that uses potatoes, onions, carrots and cashews to make an ersatz cheese sauce. takes some time and not a bad result. we had it a lot. (and initially no one could tell ?!?)

recently my doc put me on a statin. i can now eat what i want, in moderation and more or less guilt free.

so every so often, good macaroni, good cheese, other real ingredients…not a family secret or heirloom. just good comforty food.

Choosing boneless turkey breasts is making for the easiest Thanksgiving dinner prep ever. Guests are arriving at 3ish and I’m essentially done. Turkey in the Instant Pot, dressing and veggies mornay ready to pop in the oven. Taters ready to smash and just have to make gravy last minute. Guests are bringing the rest and I got a neighbor out there prepping the fire pit since we’re eating outside. Beautiful day in the 60s. Perfect!

I goof around with making a homemade version of boxed mac and cheese. In a pan I put in some whole milk, butter, a dash of onion powder (very light) and a dash of italian seasoning, pepper and salt. Get that heated to almost boiling and then whisk in various fine shredded cheeses and keep stirring and stirring as it all melts together and thickens from the melted cheeses. Then when it is nice and completely blended and smooth, pour it over just cooked macaroni and coat as wanted. I actually mix the mac into the sauce so I makes sure it is thick and creamy.

You end up with what looks a bit like box mac ‘n’ cheese, but so much better. And it is quick for a side dish.

I also bake casserole style…for that nice browned crispy topping. Baked is by far the best.

Oh yeah, I lean heavy with cheddar cheeses and mix in other types too. I like a variety. For the stove top, I use some American as it seems to help melt and keep the other cheeses blended better.

Well, as it turns out, AT&T got their wish back in 2015 in my state and stopped accepting wireline service orders. So now, you must have an internet connection or a wireless phone, both provided on as “as-is” basis, with no “x” Sigma reliability, and, due to the Dread Scott Decision of the 21st Century in Conceoption vs. AT&T, you can’t even get a day in court to fight when you’ve been wronged.

Hate to say this, but there might actually have to be a a Second Civil War….

My only Black Friday tradition is to go to the Purple Door pottery sale over in South Minneapolis. I usually follow that up with a visit to the Electric Fetus record store, but I’ve been on a spending binge this fall (three pairs of glasses, dentist, tires, a Pendelton wool blanket, books, dvds and music) that I have to skip it this year. I’m keeping my eyes open for a deal on a good air fryer though.

I was thinking is that one reason is that it is taking so long with the Flynn indictments is that Mueller is looking for a guilty plea. Not only does he want people to testify against the Trumps, but a guilty plea stands no matter what. Trump can prevent someone from going to prison (just like Bush did with Scooter Libby) but the guilty plea stands. I think that Mueller wants to set the record straight. Nothing Trump can do with a guilty plea.

It’s definitely not every bodies cup of tea. But that’s what makes the Submarine community unique. Sadly this tragedy also marks a first. The first Woman submariner to be lost at sea.

Also aboard the sub is Eliana Maria Krawczyk, Argentina’s first female submarine officer.
In 2004, she joined the navy after seeing an advertisement about military ships. She has voiced hopes of one day commanding a sub herself.
“At the time, there weren’t any female officers in the force. I took it as a challenge,” she once told the Argentine Defense Ministry in a video interview. “You can do the same things that any men do, even if you are in a traditionally male-dominated environment. … Any women can do it.”

Unfortunately, this T’giving is just Mrs. Jay and I (long story - we had to cancel family plans and flee NYC): but at least we can have a carb-free dinner: the main problem I had is that, for some unfathomable reason, I am out of onions (nary a real onion: only a small bunch of scallions).

And it seemed like Mueller was going through Mike Jr to get to that point, I suspect making it clear that there was enough there to at the very least name him as a co-conspirator. Flynn’s probably working a deal to get his son immunity, which again would put Donny in a bind because he couldn’t just call up Flynn’s lawyers and offer a pardon if their client keeps his mouth shut.

In my brief time with Mrs. Fish’s family, I got to hang out with her next-oldest sister and her partner. My sister-in-law is pretty cool, but her partner and I click amazingly well, and it was good to have someone to connect to and empathize with (besides Mrs. Fish). That made it bearable, up until the rest of the family arrived and it all got a little overwhelming. I miss going home for TG to see my mother’s family, but these days I suspect I’m looking back in nostalgia. When my cousins were younger and my eldest aunt was still alive, TG meals were fun affairs that involved a lot of family togetherness and a bunch of old men sitting around the TV by mid-evening to watch football or maybe a game show if we were truly bored.

Now? Now most of the family has spread to hither and yon, my eldest aunt has been dead for nearly a decade, my cousins all have their own kids and extended families which means they’re at the dinner for perhaps an hour before they head off to their husband/wive’s family get-togethers, and the old men are bitter farts who always have something to bitch about. And where politics was once a verboten topic at the table, it’s become a common bitching point since that “n****r” was elected back in ‘08.

Drive 12 hours back for one uncomfortable day being the lone liberal wanting to speak up and knowing he’d get nothing but grief if he did? No thanks.

There are two US holidays: Thanksgiving and Independence Day. Thanksgiving is the one with the most mythos associated with it. But, when I was a kid, it was the one time when there was enough food you could gorge yourself, making up for the other 364 days when food was one serving of a little bit of a main course and sides generally being mashed potatoes and corn. One year, my cousin and I had a food race, and ate seven plates of food apiece.

We continue to seek an edible turkey where the dark meat is done and the white meat isn’t dust.

The closest we came is when we brined and spatchcocked a Bourbon Red heritage bird. But that’s a lot of work, and the bird was pretty expensive. It was really, really, good though.

I’m at the point of just cooking boned turkey thighs and calling it a day. There were just the two of us this year and we tried a Trader Joe’s half-breast, bone-in, that was purportedly cooked sous vide and only needed to be warmed up for luscious juiciness.

Nope nope nope. The Flying Spaghetti Monster didn’t have enough sherried pan gravy to save that pitiful excuse for food. The sides and salad were great, and the bourbon chocolate nut balls were just outstanding for dessert, but turkey is the screaming bitch kitty to do the meal right.

We cook a lot, by the way. There’s a reason why we rarely try to make turkey. It’s been bred into tastelessness.

The green stuff is pistachio pudding, and it is a delicious treat with pecans and pineapple and cream cheese, although I would certainly leave out the orange cheese!!!

Turkey (deep fried or oven roasted; one year they carved it up and grilled it… mmm…)
Ham
Rolls
Corn pudding
Mashed taters
Green beans
Cottage cheese
Homemade mac and cheese
Pumpkin pie
Vinegar pie
