Creamed dried corn ("Cope's Corn"). An absolute staple of childhood Thanksgivings in Lancaster PA, easily available in California thanks to the wonders of the internet.

Being that my dad was the big cook in the family and he was from Connecticut, we always had a pretty much New England style Thanksgiving menu.

In order of importance:

Turkey - roasted, just patted with butter and seasoned with salt & pepper
Stuffing - must be white bread & sage, celery, onions
Mashed potatoes - just potatoes milk, butter, salt & pepper
Pumpkin pie - nom, nom, nom
Cranberry sauce
Candied yams
Stuffed celery sticks - cream cheese, Spanish olives & chopped pecans
Various vegetables - corn was a staple, kids didn't have to eat veggies that day
Other assorted pies - lemon meringue was a staple
Homemade peanut brittle - but not every year

Nothing too fancy or exotic, just lots & lots of simple, good home cooking prepared with much love (the most important ingredient ;)).

My most important dish is the family jello recipe. It involves strawberry jello, gerbers banana baby food, assorted fruit and sour cream.

Other family staples include:

- Turkey brined overnight and grilled (more room in the oven!)
- Whole foods gravy perked up with sherry and other odds and ends
- Mashed potatoes
- Sweet potato casserole
- several varieties of cranberry sauce
- Lots of pie (always including pumpkin)
- a rotating variety of veggies, this is where people show off since everything else to stuck in tradition.

My grandmother used to make dried corn. Never thought of making creamed corn out of it. Sounds rich.

Hadn't heard of that stuffed celery combo. Gonna try it. I thought New England style Thanksgiving implied the inclusion of shellfish, but maybe I just imagined that.

Yeah, the shellfish thing just wasn't popular with the rest of the family. My dad loved clam chowder, going fishing & crabbing at the coast and cooking & eating his catch on the beach, but the rest of us just weren't huge seafood fans. It's not that we disliked it, we just didn't go out of our way to have it. I eventually developed a severe allergy to it about 20 years ago, so I can no longer even eat the stuff I liked.
