Why is the plate saran-wrapped?

It was prepared by the caterer at a different location and delivered to the venue. According to rules of kosher preparation, individual servings have to be separately wrapped and sealed, just like airline meals.

Jew fish is the common for a species of fish in Australia, it's not even referring to Jews as such, but as a shortening of the name Jewel Fish (it's what we do in Australia).

Argyrosomus japonicus

Argyrosomus japonicus is a silvery to bronze-green colored fish which may grow up to 2 m in length. It is known as mulloway or jewfish in Australia and dusky Kob in South Africa. The name jewfish refers to the large earstones, which are prized as "jewels" by some fishers.
A. japonicus is a member of the Sciaenidae family, and has an Indo-Pacific distribution occurring in coastal waters surrounding Australia, Africa, India, Pakistan, China, Korea and Japan.

There is also a town called Jewfish in Florida.

Jewfish is an unincorporated community in Monroe County, Florida, United States. It is located in the upper Florida Keys on Key Largo off of U.S. Route 1 (Overseas Highway). It is just west of the CDP of North Key Largo.
It has a hotel, restaurant and marina.
Neither the exit off U.S. Route 1 nor any sign when entering Jewfish makes it apparent that the community's name is "Jewfish."

Since this menu item was selected by the kosher caterer, there was clearly no intent to insult or ridicule, but all the same it just does seem very weird.

Might be a different species, but there is a gamefish called 'jewfish' ion the Gulf. They grow to be really big.

It's possible that this whole thing is just the Aussie sense of humor at play--they can be like that.

It sounds like this was the sort of event that should definitely happen here, where all three faiths break bread together in a positive way. That said, those that could learn the most from this would yell and scream about how someone is kowtowing to followers of the Muslim faith by providing food they're permitted to eat according to their dietary laws.

No. It is the actual fish name. It sounds odd to American ears where 'fag' does not equate a match and a 'torch' is not a flashlight.

It does not even have anything to do with Jewish people - just a slang term for jewelfish (shiny scales) that got contracted over time to Jewfish or so I have heard.
