Hawaiian Pizza: An Analysis
You really must [try Hawaiian pizza] — that sublime combination of toppings, the delicate balance between sweet and salty, crunchy and squishy… (best to get double cheese while you’re at it, better odds on keeping the toppings from sliding off)
I was doubtful, but I tried it.
It… wasn’t bad. A trifle too sweet for me. While the ham was salty enough, it didn’t seem to add much to the overall taste.
I started peppering it.
First with ground black pepper, then with cayenne pepper, then with smoked paprika.
Folks, the peppering is the key. Went from “okay” to “awesome”!
Per pie, I recommend about 3 grinds of black pepper over the pie entire, 3 shakes of cayenne, and 2-ish shakes of smoked paprika.
This interacts with the sweetness of tomatoes+pineapple and changes the flavor profile. Also reduces the saltiness of the ham, and makes it assert itself on the tongue.
Recommended, with my caveats.
