Rhubarb!

I have never tried rhubarb. I know that it is usually mixed with strawberries. Strawberries are very sweet and rhubarb is sour, so they complement each other. Maybe I will try it next summer when they are in season.

I once made a Shoo Fly Pie but the molasses was just overwhelming.

Made the wrong way it can be. Trust me. Good Amish bakers equal killer Shoo Fly. I like Pecan Pie and I’ve been places in the south were they just murdered it. Had bad BBQ in Arkansas and Georgia. Shitty cheese steak in Philly, and trust me, that is hard to do.

Sweet Potato pie is very good (and easy to make) if made properly, very similar to pumpkin pie but with a lighter taste.

However my real favorite is Georgia style pecan pie, still warm, and with French vanilla ice cream ala mode. Yummy, but so sweet it can make your future cavities ache…

“Mississippi style” sweet potato pie… (Recipe makes two pies)

6 ounces butter, softened.
3 cups cooked and mashed sweet potatoes. (about 4 large potatoes)
1 and 1/2 cup granulated sugar.
1 and 1/2 cup dark brown sugar.
3/4 cup plus 3 Tbsp. Evaporated milk.
1 and 1/2 tsp. vanilla.
5 eggs, beaten.
2 tsp. cinnamon.
1/2 tsp. nutmeg (opt. for more “pumpkin pie” like taste).
1/8 tsp. ginger (opt. for more “pumpkin pie” like taste).
2 “Deep dish” pie shells, unbaked.

Once Potatoes are peeled, chopped, and boiling in preparation for mashing, preheat oven to 350 degrees.

Mix butter, potatoes, sugars, and evaporated milk well. (To remove the majority of the “strings” from the potatoes use several very short bursts of the blenders blades to entangle the strings and then wipe off or rinse the blades each time)

Then add the vanilla, eggs, and spice(s) and mix well on lower speed. Pour into the pie shells and cook at 350 degrees approx. 1 hour or until set.

I’m for apple. My moms secret that I haven’ t seen anyone else do. Grate the apple so the filling is shredded not slices.

I don’t know if it’s just that we got brought up on them like that but our family loves them best that way.
