Fear The Cheesepocalypse
The FDA has decided that wooden boards can not be used to age cheeses, and the ruling may extend to imported cheeses. Many European cheeses are required to be aged on wood per the standard of identity, and many small cheesemakers in the US rely on wood aging boards to produce unique cheeses. Artisan cheesemakers are in a panic that their way of business might be radically changed.
