A basic kitchenaid will do the job.

A basic kitchenaid is fine depending on the amount of dough. If you’re using 4 cups of flour or less you should be fine with a basic kitchenaid.

However if you want to make a larger dough using more flour, a kitchenaid will overheat and the newer models (which are crap compared to the old Hobarts) will just shut down.

Since I make bread dough using an entire 5-lb bag of flour, I had to make two batches in the old Kitchenaid, and even then I put a bag of ice cubes on the motor to keep it from overheating.

The Electrolux can easily handle 5 lbs. of flour.

I still use the Kitchenaid for cake batter, muffins, and small batch dough, and a Cuisinart for pie crust.
