I said “probably” because we had the Supreme Court case this year saying state legislatures can bind electors to the general election results, but if a VP nominee were to die between nomination and when the electors cast their votes, I doubt any state legislature is going to get too worked up over their electors voting for the replacement.

In 1912, Vice President James Sherman died after the election but before Electors cast their ballots. In that situation the Republican National Committee named Nicholas Butler as the replacement VP candidate and the 8 winning GOP electors (Utah, Vermont) cast their Vice-Presidential ballots for Butler.
