While true so far as it goes, there isn’t anything new about it. 90% of French cuisine is gentrified French peasant food. Bouillabaisse is nothing but a stew of fish so poor that they couldn’t sell them and so on.
Hell, wasn’t lobster once considered unsanitary and unsuitable for consumption, and only got seen as food eventually after they were the only thing that could be caught for prisoners to eat? Something like that?
