This kind of made sense to me in that elk makes a great ground meat, but if you use it to make things like chili or taco meat, it’s best to put a little ground beef in it to have a little fat in it. Dude’s step mom made fantastic elk chili, but it always had a little bit of ground beef added. Texture, binding, etc.
