Short answer to the questions posed are:

“Space is not completely empty but contains all sorts of flotsam (from asteroids on down to hydrogen molecules).”

“Impulse engines are just fusion rockets that conform to the third law of motion through the use of ionized plasma.”

and

“Warp engines rely upon theoretical exotic materials to warp space itself in a manner that is theoretically plausible but requires such large amounts of energy that it’s not currently feasible to test.”

And let’s take a moment to recognize that these are the less controversial bits of tech hand-waving that Trek engages in. You want the kind that tosses reality in a ditch and puts two in the back of its head, watch Star Trek: Discovery.
