To go with the enchilada casserole that is dinner tonight (currently cooling in the fridge before it goes into the oven, because the husband has not left the office yet and I am a kind and benevolent wife), I’m trying a new cucumber salad.
Diced cucumber, red onion, salt, lime juice, tequila, and a little bit of garlic powder and cumin. Tossed in just a tiny bit of feta. My first tastes were that it’s pretty good, I’m looking forward to trying it with the meal.
