Even the kosher pastrami isn’t as good as it was only a few years ago. With lots of kosher delis going out of business, there are fewer places that take the time to brine and season the pastramis the way they used to - it takes time and money to do them right, and most would rather just deal with the prepackaged varieties that are a fraction of the flavor.
