Wet brine for 48 hours.. The white meat was moist and delicious, legs and thighs were done but not as done as I like. Not bloody but stiff and the meat hard to get to at the joints.
I dry brined it. Both the white and dark meat were unbelievably moist. Hubby and Mom loved it. I thought it was ok because I don’t really like turkey. 😂 But hey, it’s Thanksgiving, so it’s almost a law.
The sausage stuffing was pretty good. Hubby didn’t love it, tho.
The gravy was tasty but a little too thin. I added some chopped up giblets to it. Needed more roux.
When everyone wakes up, it’s cheesecake.
I want cheesecake.
Did I mention there’s cheesecake? 😁
