I think chicken was conversely seen as more luxurious. Hoover’s 1928 slogan was a “Chicken in every pot.” Food is funny. It amuses me how caviar became the food of the wealthy elite.
At one time, lobster was seen as throwaway detritus and was used to feed prison population. Then, it became a luxury item.
