Mrs. Fish and the kids are big fans of what they call “eggs in the middle of bread”, which is where I cut a hole in a piece of bread, butter it up, and fry it in a pan with an egg. I don’t really like fried eggs so much so I don’t eat it, but they love it. I think the foodies call it a “toad in a hole”?

Dad always called it a “Nest Egg”, he used a sugar cookie cutter to remove the center of a slice of bread and the egg yolk would be in the center hole.

Sometimes Mom made “shirred eggs” in custard cups with a teaspoon of cooking sherry, shreds of cheddar cheese and chopped chives. They would be baked for around 20 minutes. Mom would serve with corn muffins made with the Jiffy mix.
