He could lie and hope Trump pardons him (I don’t think Trump will because he is loyal only to himself). But that just turns into another article of impeachment.
Too much of a gamble at this point. Stone might get away with it as Trump could do it on the way out the door. But assuming Sondland lied/plead the fifth on Wednesday, the prosecution could just slow walk things in such a way that he’d be before a jury too late to hope for such a pardon. Given the seriousness of events, prosecutors probably won’t even bother offering a plea deal, given the track record of those who’ve lied to Congress.
