I don’t speak Mandarin or Cantonese… but I care deeply which one the restaurant I’m eating at claims to be “authentic” versions of — I need the skin of the duck to be crispy, and the right kind of pancakes on my mu-shu.
That’s a touch-and-go thing in most of the USA. If you’re near a Chinatown, ask the locals where they go to eat Chinese food. Or peek in a restaurant and see how many diners are Asian. A menu in Chinese is another tipoff.
