Me, too. Toss with some olive oil, S & P, and garlic, roast at 425 until crispy on the outside, toss with some acidic liquid to finish; balsamic vinegar, lemon juice, etc. if you’re feeling really energetic, start by searing in cast iron pan before tossing and roasting.
