Hmmm I have been looking over online recipes for chocolate ganache and they all say to use top-of-the-line bittersweet chocolate. Not the chocolate chips that have been stashed at the back of the pantry since 2007.

The better quality chocolate, the better tasting the ganache will be.

The Mrs. uses Ghirardelli - widely available, good quality, and kosher. I think a bunch also call for corn syrup to give sheen.
