My Grandmother made the best damn fried chicken in the whole fucking world. Period.

She grew up on a farm in Missouri. She used an unconscionable amount of salt. She didn’t coat it with buttermilk or anything like that. The parts were dredged in flour mixed with salt and pepper. She fried in Crisco, in two pans - one wide, flat skillet and a second tall-sided pan with a lid. She turned it with a fork. She was always moving pieces from pan to pan, taking the lid off for a bit, putting it back on for a bit, raising the heat, and lowering the heat, all for no obvious reason.

None of us who watched her and have tried to replicate the magic have come close.
