To go with the enchilada casserole that is dinner tonight (currently cooling in the fridge before it goes into the oven, because the husband has not left the office yet and I am a kind and benevolent wife), I’m trying a new cucumber salad.

Diced cucumber, red onion, salt, lime juice, tequila, and a little bit of garlic powder and cumin. Tossed in just a tiny bit of feta. My first tastes were that it’s pretty good, I’m looking forward to trying it with the meal.

Oh, yum. That sounds outstanding. Don’t skimp on the feta. That and unflavored yogurt are outstanding with cucumbers and red onions, (also, try a little curry).
