I know many who think that. They have to be very fresh eggs, but not fresh laid (I know because we used to keep chickens)or the membrane is still attached to the shell and they do not peel properly.

I learned from Jacques Pépin how to boil an egg—after years of suffering trying to peel them. You boil the water first, take a push-pin and make a hole in the air pocket at the big end, dump the eggs in the boiling water, bring it back to the boil, then turn it down to simmer. The water works its way under the membrane and makes them easy to peel.

The only spanner in the works is the mutant chickens they’ve got nowadays that lay eggs with two big ends or two small ends….
