I seriously doubt this is the reason. More likely they saw pigs will literally eat just about anything. Including excrement from other animals etc. They probably also noticed a lot of people getting sick from eating pork even if they had no idea what trichinosis was.

Trichinosis is the most likely explanation. Some poor schmuck ate an undercooked pork chop back during the Neolithic Age and that left one hell of an impression, namely, that the animal was somehow cursed and anyone who ate its flesh would certainly die as a result of that curse.
