Episodes/movies seem mixed. Spock gets put into a photon torpedo casing and is launched out. But you see graves made for this or that person in varies episodes. (Including Kirk on at least one occasion though he doesn’t end up in the hole on a permanent basis.)

Generally speaking, if a death occurs on or near a planet, the deceased will be buried on that planet or (sometimes if human) be held in the morgue on the ship until the body can be returned to earth, though it’s usually the former.

If a death occurs in a region nowhere near a planet, the torpedo tube coffin is the traditional option (which makes sense as there is literally nowhere to bury someone in deep space).

Also fair to assume cremations are still a thing in the Trekverse but I’m not sure we’ve ever seen one on screen.
