I recently heard Professor Jennie Brand-Miller speaking about her research on evolutionary nutrition; she pointed out that compared to the nutritive improvement in cooking starchy tubers, cooking meat did not add as much value, so the practice of eating uncooked or undercooked meats has probably persisted throughout human evolution.
