re: #213 klys (maker of Silmarils)

This one uses a riff on a enchilada red sauce - really just beef broth, tomato sauce, and taco seasoning with a garlic and butter and flour mix. I throw a little more taco seasoning in with the ground bison (it calls for ground sirloin in the original recipe) and some onions. It’s tasty and fast and low calorie for what it is - a quarter of the pie is ~375 calories.

The gaucamole slaw is just an avocado mashed with lime juice and salt, add a little bit of sour cream. Mix that up to something vaguely creamy and then toss cabbage slaw with it. A nice clean counterpart to the flavors in the casserole.

Oh? That’s just me getting in the car to drive to Klys house, don’t mind me. :) Seriously though that sounds delicious.
