Physically, the creature reminded me of Abe Sapien in the movie Hellboy. And didn’t Abe like eggs too?
Even though I have yet to see it (The Shape of Water hasn’t opened here yet) one hint I gathered from the trailer is that the creature is “from the Amazon, where the locals worshiped him as a god”.
To me, that sounds a hell of a lot like a direct reference to the Gill-Man from The Creature From the Black Lagoon. IIRC, Del Toro was briefly involved in an attempted remake of CFTBL a few years back, but apparently, no one at Universal Studios was interested (much like he’s unfortunately never been able to find much Hollywood interest in making a feature-length film of Lovecraft’s “At The Mountains of Madness” - he’s got a screenplay ready to go and everything).
