You could build some hoop houses. Use PVC pipe and clear painter’s tarp (the thickest you can find) from the hardware store. Very cheap.
It’s a little late in the season to get stuff started but if you buy an assortment of Kale, mustard greens, collard greens, and chard you can probably get stuff going.

Yeah unfortunately it’s really too late to start anything where I am. Snow could come any week now and I can’t see getting a hoophouse organized in the next couple of weeks happening. Working on a hoop house to get an early start next year could work though. Maybe I should look at some indoor growing ideas, like micro-greens.
