Sounds like it’s giving a nod to sourdough starter. It doesn’t sound like enough to actually leaven the bread, so I assume yeast is added as well. (A typical sourdough-leavened bread would involve 1 part starter:1 part water:2 parts flour + a pinch of salt.)
