Making soup is fun. My favorite is a chunky chicken noodle, and I use a couple of chicken breasts, cooking first and making the broth (which should be strained), then chopping it up and adding chopped onion, carrots, celery along with a Mexican macaroni product that looks like skinny spaghetti broken up. If the broth needs it, I’ll add a can of broth or stock, but usually it doesn’t. Add salt, pepper and parsley and it’s great. Usually enough for several lunches. Even with the prep time, this can be ready in an hour.
Packaged as Fideo or Vermicelli.
