Poblanos can fool ya. We got Mild and Way Too Hot off the same bush. I’ve turned to Marconis, esp for stuffing and grilling.
For hot try the Peruvian Rocoto. Rocoto Relleno is a stuffed version from Arequipa. Not for the faint of heart though. Mild is 50,000 on the scoville scale, up to 250,000. If you ain’t crying when eating it, you ain’t trying. Cooking tames it a little, but numbness of the mouth soon sets in.
In the interests of transparency it is my single favorite food on the planet.
