It works very well. I used this as my guide. I didn’t use the soup can because I used a solid block of pear wood, not chips or dust. I found that using my weakest soldering iron works best. All you need is a light haze of smoke. The smaller iron also creates less heat. One small block will last pretty much the full 12 hours. I cheated on the rinsing time, I think I rinsed for 1/2 hour and stopped, the salmon cam out slightly saltier than I prefer. In the future I’m going to use the top 2/3rds of a full filet and save the bottom 1/3 tail section for regular cooking. since the tail end is thinner it absorbs a little too much salt and smoke. The best stuff come from the top 2/3rds of the fillet.
