OT to ask any of the culinary wizards here for a bit of advice.
To make a long story short, I’ve ended up with several Sturgeon fish steaks (pretty rare to find in this corner of the world) and have no idea how to even try to prepare them. I was initially gonna grill them but then read that this particular fish doesn’t react so well to the grill, and so I’m alternatively considering using either a honey mustard marinade, lemon and herb marinade or Teriyaki, figuring that two to three hours before the oven would be fine).

Any thoughts/suggestions?
