Sea bugs used to be cheap garbage for poor people. Somewhere along the line rich people figured out it apparently tastes good, and all of a sudden it was a delicacy and the price skyrocketed.

Same thing has happened with lots of cuts of cow - skirt, flank, some pieces of offal (e.g., pancreas), etc. All used to be inexpensive — no more.
