A momentary OT diversion.

I attempted carnitas last week, which ended up coming out more like pulled pork and less like carnitas. Still, because there was a lot of pork, there are a lot of leftovers. So last night I made a mustard-vinegar BBQ sauce and had pulled pork with cauliflower rice and the sauce, plus pickles and some homemade slaw. Not bad.

Tonight I am trying to do a quinoa salad of some sort with the remnants of the pulled pork and trying to think about how to do this. I was sort of thinking a tzatziki sauce with it? And then a Mediterranean twist to the salad? (Olives, bell pepper, red onion, diced cucumber? I might have a little bit of leftover hummus too.)
