Mrs. FBW is not fond of corned beef. Nobody but me is fond of the cabbage and potatoes and carrots all flavored with corned beefness. The Irish don’t eat corned beef and cabbage in Ireland*. So, a year ago, I hit on Colcannon as the Irish meal for St. Patrick’s Day.

Mashed potatoes with cabbage, bacon, green onions, and far too much butter.

Added the requisite Guinness.

I DID buy a nice piece of corned beef. For sandwiches.
