Mmmm sweetbreads.
The most delicious thing I think I’ve ever tasted was a warm salad of lobster & sweetbreads served at the restaurant of a 4-star hotel in Varetz, France. When I came home raving about it I learned that my father-in-law had had essentially the same thing in a restaurant in NYC years ago, and also considered it one of the best things he’d ever tasted.
How is thymus gland prepared that makes people think it is so delicious? Coated in chocolate doughnut dough and deep fried?
