One thing I note is that those torte recipes call for relatively little chocolate. They have more butter, flour, and sugar than chocolate. Most of them appear to be less than 10% chocolate mass.
In my matching exercises I’m using chocolate (bars) from 33% to 85% chocolate solids. Much more difficult.
