Mrs. FBW is not fond of corned beef. Nobody but me is fond of the cabbage and potatoes and carrots all flavored with corned beefness. The Irish don’t eat corned beef and cabbage in Ireland*. So, a year ago, I hit on Colcannon as the Irish meal for St. Patrick’s Day.
You’re right that the Irish don’t do corned beef and cabbage. The do have a ham-and-cabbage dish, but as far as I know it isn’t particularly associated with St. Patrick’s Day, which itself isn’t celebrated like it is in the USA.
If I had to choose a meal for St. Pat’s that I consider especially Irish, at least for the west of Ireland, which is as Irish as it gets, it would center on a lovely salmon.
