You might wanna check out “Hawkwood - Diabolical Englishman”, a work of history (written like a novel) set in Northern Italy in the XIV century when the city-states hired “companies” of mercenaries to fight for them, the most famous being Hawkwood, the Englishman.

It mentions for example that they did in fact hurl dead cows with catapults as potrayed in “Monty Python and the Holy Grail”, but that they preferred pigs because they were more aerodynamic.
