Any manipulation - it wipes out the rotation attribute that iOS sets on the photo. It’s been a long-known sticking point with iOS devices; I had to explicitly work around it when working with photo data on an iPad app I wrote years ago.

It also happens with Android. I’ll take a picture, and if I post it directly, it gets rotated, but if I crop or scale it, it’s fine.
