For years I’ve wanted to make kosher goose. It used to be available at our local kosher grocer for Hanukkah, but I haven’t seen it for a long time. Geese are tough to raise, mean varmints, difficult to slaughter and horrible to clean. Butchers prefer turkeys.

Hungarians sure do love ‘em some roast goose.
