It’s an Oregon thing. I suppose I could buy frozen crayfish from the bait shops. They’re probably safe but I feel better getting them at a regular food store.
There are indeed different grades of crawfish.

Do you know - are they Chinese crawfish or US crawfish?
Big scandal here a few years ago, stores were selling Chinese crawfish, labelled as Louisiana crawfish.
