The Mrs has been wanting to do more vegetarian dishes, and we found a good “stew” that works as a compromise. It’s a Perisan chickpea and spinach stew with basmati rice. It totally works - there’s a bit of lemon zest and lemon juice to brighten flavors, tumeric, and a bunch of fresh herbs - cilantro, parsley, and dill, plus mint for garnish. I was surprised at how filling it was, since I usually need more after a vegetarian meal.

Think I’m going to make it part of my regular meal planning rotation….

If you don’t hate squash-like vegetables something to consider cooking is a stuffed pumpkin. Generally it’s hollowing out a small pumpkin (3lbs or so) and filling the cavity with baked stale bread (essentially croutons), cheese, garlic, and spices. Then adding a bit of heavy cream and baking it for a few hours. (My version is non-vegetarian and includes bacon.)
