You know, that’s something a lot of Americans never really think about. We just call it Chinese but Chinese food really has a lot of variety. I wouldn’t mind trying this sauce but I’m under no illusion that it’s got any real relationship to Szechuan cuisine.

Happy, when I was a kid I thought eating Chinese food was when Mom would open a can of La Choy Chow Mein—the old double cans with the meat & gravy in the smaller upper can and the vegetables in the lower larger can. Mom would then open a can of La Choy Chow Mein noodles and we’d dig in. Then Mom and Dad heard of the Bellevue Tea Garden. We went there and I had my first experience with broccoli beef and shrimp in lobster sauce. HEAVEN. I never wanted to go back to La Choy after that…
