Outside of responsibility for counting the votes, what other responsibilities do state secretary of states have? The position is totally different than the federal position with the same name in contrast to the state AGs who are just state versions of the AG of the entire country.

They vary from state to state, but most usually involve (in addition to election monitoring and/or certification) “administrative” functions, like official record-keeping, business registration, licensing functions, notaries, etc. And, in five states, in charge of the state museum.
