Demand ultimately leads to an increase in supply, which leds to a reduction in price. Even WalMart has organic produce and locally sourced produce (at least in some areas with nearby agriculture). Higher end chains like already emphasize local connections. People like cheap food, but there is a tipping point where the incremental savings is not worth the incremental risk. I think this tipping point is fast being reached.
