I’ve been doing Mexican simply because pork butt’s been really cheap recently.

Which means inexpensive dabbling with carnitas, pibil, lomitos, et cetera.

The big plus side being that the end result can be broken down and frozen easily, then gussied up with add-ins (beans, fresh veg, pickled veg) and shoved in tortillas or tacos or whatnot. That way I can fix a comparatively fast meal, with a bit of variety.
