I’m doing the stew tonight, minus the celery leaves because I drew the line at buying celery just for the leaves. I figure I will add more of the others and then a little bit of celery seed for the flavor.
If you have a respectable international market or a penchant for herb-growing, look out for Chinese celery, which is grow for leaves, has stems rather than big ribs, and a stronger celery flavor. I just used up a bunch yesterday.
